It was a few days ago when I was in one of the Facebook groups where I roam I did see a picture of a pink crunchy cream puff filled with black tea cream and red fruit made by a person that I immediately recognized. The crunchy cream puff was created by Farida, the No. 3 of The Great Dutch Bake Off competition season 2015. I got to chat with Farida and I promised her during the chat that I would make a nice counterpart for her pink crunchy cream puff that she created. And because of that I used the green color for the crunchy part of the puff in this recipe.
Why we Dutch have named the crunchy cream puff tijgersoes (tiger puff) I do not know. Personaly I would have named the puff Krakelura Soes (cracked suface puff) after how the surface looks after baking. The French understand it and have a much better name, namely Choux au Craqueli. The fact is that however you name the puff it is a special product. When baked in the oven a puff is created topped with a crisp light sweet layer that looks very nice and also is very tasty.
